Mike’s Smoked Garlic

Take one magic pizza oven, fill with hardwood and light. As soon as it’s going well add two blocks of peat (rescued from the clutches of a western isles distillery). Add tray of garlic bulbs, buttons trimmed to sit flat. Tops cut off to allow generous glugs of olive oil to nestle around the cloves.

Close door and leave to roast and smoke for the period it takes to drink several large glasses of wine turning the tray occasionally……
Return to your spoils, resist urge to guzzle all instantly on warm baguette.
